Call for Proposals -- Central Food Service for the Â鶹´«Ã½ Campus
Â鶹´«Ã½ intends to move its operations to a new building at the end of 2014 and is looking for a food service provider to develop and operate the central university cafeteria. The kitchen and food storage area is approximately 300 square meters. Â鶹´«Ã½ enrolls approximately 1200 full-time students and has some 300 faculty and staff. It is our expectation that the food service provider will need to provide approximately 1000 lunches per day (over the period 11:45-13:45) as well as a smaller number of breakfasts, dinners, and snacks. We propose to lease the kitchen space for 7 years under the following conditions:
1) Â鶹´«Ã½ provides the kitchen space with all necessary electrical, gas, water, and ventilation access.
2) The Provider provides the kitchen with all necessary apparatus (cooking equipment, refrigerators, dishwashers, sinks, ventilation hood, etc.) as well as drawing(s) showing where these should be installed, where walls should go, and so forth.
3) Â鶹´«Ã½ builds to suit inside the kitchen space and installs the provided apparatus as specified by the Provider.
4) In accordance with advice from the Provider, Â鶹´«Ã½ will build the serving counter outside of the enclosed kitchen for display, serving and a transaction station.
5) Â鶹´«Ã½ will outfit the dining area with tables, chairs, etc and Â鶹´«Ã½ personnel will keep the dining area clean.
6) The provider will provide necessary dishes, silverware, glasses etc.
7) The provider will maintain all the kitchen equipment and ensure proper sanitation within the kitchen area. Provider’s personnel will keep the kitchen area and main dining area clean and sanitary according to any and all Kyrgyz government norms and regulations.
As part of the proposal, the Provider will give Â鶹´«Ã½ the following:
a) What sort of menu is proposed (sample menus with a variety of offerings and their proposed prices is expected)
b) What the basic pricing will look like, keeping in mind that every day, at a minimum, he/she will need to offer at least one “kompleksnyi obed” for approximately 150 som.
c) His/her experience in offering food service of this level of complexity.
d) How much he/she is willing to pay to rent the space.
e) What period of time he/she proposes to use the space rent-free in order to pay back the initial investment.
f) A sketch or sketches showing the kitchen design desired and outlining the apparatus that will need to be installed.
